zucchini pizza crust

zucchini pizza crust recipe

4 cups shredded zucchini
1/2 cup shredded mozzarella
1/2 cup shredded parmesan
1 egg
oregano or italian seasoning
salt

drain and squeeze excess moisture from zucchini
mix everything up
lay out parchment paper on a pan
dump it out on the parchment paper and flatten into a pizza shape. thinner is better, especially in the center, but dont make the edges too thin.
heat oven to 400
bake 30 minutes

add toppings, bake for 10 more minutes

various recipes said 450 for 10-15 minutes, or 350 for 25 minutes. when i was patting the 'dough' out into a pizza shape, it was still rather moist and squishy. so i lowered the temperature and went for a longer time. also, my oven seems to run just a little cooler, it usually takes things longer to cook in my oven.

i probably added more cheese than it says. i like cheese.

i think i should have done more to remove moisture from the zucchini. this was suggested in one recipe: -Microwave zucchini on high for 6 minutes, let cool and then squeeze out as much moisture as possible

you can see here how um, squishy it is. its not crust like at all. it did set up better as it cooled, but was still quite limp. tasted good tho. i'd make it again, but do more to get rid of all the moisture.

all cooked, with bacon added. bacon makes everything better.
