hashbrown casserole

i made hashbrown casserole. i finally found a recipe i really like. (i have 7 different recipes printed out that i've tried in the past...)

mix everything up except the hashbrowns

i didnt think the hashbrowns would all fit in the bowl so i divided them by three into the pans

divided the mix by the three pans

stirred it all up in each pan

i put one pan in the oven, and covered the other two with plastic wrap, pressing it down against the food.

then i covered them in foil and wrote the cooking instructions on the foil.

it was so good i forgot to take a picture of it when i took it out of the oven.


Crack Potatoes or Loaded Potato Casserole

2 (16oz) containers sour cream (1-1/2. 24oz sour cream is plenty, dont need 32oz)
2 cups cheddar cheese, shredded (or more, hehehe)
2 (3oz) bags real bacon bits (instead i used 2 pkgs of diced ham, 8 oz each)
2 packages Ranch Dip mix
1 large (28 - 30oz) bag frozen shredded hash brown potatoes (many comments on the recipe suggested more hashbrowns were needed, that this should have been doubled like everything else, so i used 2 bags, 20 oz each, of a refrigerated variety rather than frozen)

Combine first 4 ingredients. Mix in hash browns.
Spread into a 9x13 pan. Bake uncovered at 400 for 45-60 minutes.
OR
divide into 3 small 7x7 disposable foil pans and freeze them. wrap them with plastic wrap and then foil. bake 60 minutes from frozen after being sure to remove plastic wrap.
