they taste only very slightly like radishes. not quite the same as hashbrowns, but pretty darn close! that spicy bite that raw radishes can have, that disappears entirely. but then i just used regular red radishes, not the stronger radishes. and the shreds REALLY shrink up.
maybe next time i'll salt the shredded radishes and let them sit in a strainer, try to get some more moisture out of them before cooking them. or see if squeezing them in a tea towel squishes out moisture like it does for zucchini shreds. and definitely less in the pan at one time.
onions from my garden
bacon grease to fry in, since bacon makes everything better and i've never done this before.
shredded radishes
i shredded 1 and 1/2 bunches of radishes. that turned out to be too much for the pan. next time only 1 bunch, maybe even less than that.
browned onions
radishes mixed with onions. i dumped them all in the pan, not realizing there was so many. it was too much for the pan, took a long time to cook.
i think they steamed more than they fried because the pan was too crowded. the middles never got done. but the edges were nice and crunchy (i like my hash browns crunchy).
i added some salt and gobbled all the crunchy edges up. the not fully cooked middle parts i fed to the dogs, who thought they were fabulous.
i didnt use any real recipe, just kinda did what i do for hashbrowns. shred some stuff and fry it. but i got inspiration from these recipes:
